Parley is teaming up with Michelin-starred British chef Tom Sellers to showcase how restaurants can go plastic-free and help spread awareness

 
 
 
 

Starting this week, Tom and the entire team behind Restaurant Story in London will be decamping to the Cornish Coast for a six-week residency on the ocean in Carbis Bay. Story by the Sea will highlight the natural beauty and local produce of Cornwall, and mark the beginning of an ongoing collaboration with Parley.

Part of the proceeds from the pop-up will help remove 50 metric tons of marine plastic debris from beaches, remote islands, rivers, mangroves and high seas, as well as coastal communities through the Parley Global Clean-up network.

“I have always had the fondest memories of the seaside and a very loving relationship with our oceans,” explains Tom. “The ocean is a magical gift we have been given, along with everything found within it, and I feel extremely lucky to have this opportunity.”

 
 
 
 

Tom learned his craft alongside some of the world’s greatest and most influential chefs, including Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen – all before the age of 21.

In addition to supporting Parley’s cleanups, and to further emphasize the message of valuing the seas, Story will be launching an exclusive collaboration with Parley debuting at the pop-up. Restaurant guests will receive a Parley Ocean Bag as the ‘final course’ of their meal. Each bag is made from roughly five intercepted plastic bottles and empowers diners to protect the oceans by avoiding single-use plastic bags. 

The bags will also be available to purchase from the Story website for £20 with all proceeds going to support Parley’s global clean-up operations. Every sale will lead to the removal of 10 pounds of marine plastic waste.
